Barolo Riserva Marchesi di Barolo is the ideal companion for egg pasta, tajarin, and ravioli with savory sauces like game ragout and truffles; for roasted or braised red meats, game, and venison. It pairs magnificently with sheep's and goat's cheeses, or with aged hard cheeses. It's also a wonderful after-dinner wine, paired with dry pastries. Aged at length, it's a meditation wine.

Marchesi di Barolo Riserva is produced exclusively with Nebbiolo grapes from vineyards with particularly clay- and limestone-rich soils, which, visually, resemble white soils. These soils, very compact and impermeable, force the vines to grow deep roots in search of water. The result is particularly sparse bunches with small berries, which give the wines an abundance of minerals, trace elements, and a rich tannin content, ensuring remarkable longevity. Freshly harvested, the grapes arrive at the cellar intact and are quickly pressed and delicately destemmed to extract only the most noble and aromatic fractions from the skins and outermost part of the berries. Fermentation, at a controlled temperature, takes place in thermo-conditioned tanks. Maceration on the skins lasts approximately 10 days, during which periodic gentle pumping overs are performed, allowing the must to absorb all the trace elements present and delicately extract the coloring material. The wine is drawn off only when all the sugar has been converted to alcohol. Racked into specially constructed glass-lined concrete vats insulated with cork, the wine maintains the post-fermentation temperature of approximately 22°C for a long time. This allows malolactic fermentation to begin and finish spontaneously within a short time. This enhances its full richness and allows the various components to blend perfectly, giving us a fully expressed wine, yet capable of a very long life. The Barolo Riserva ages for three years in traditional large Slavonian oak barrels, which contribute to its harmonious and balanced character and enhance the finesse of its bouquet. It completes its refinement in bottle for several months and can only be released for sale approximately six years after the harvest. The maturation plateau of Barolo Riserva exceeds 30 years.
