How to taste it
What to pair wine with Barolo Chinato Cappellano
Barolo Chinato Cappellano is made from already aged Barolo, to which cinchona extract mixed with other aromatic herbs, sugar, and alcohol are added. The list of spices used for flavoring remains secret. The balance of contrasts, the complexity of flavors and aromas, and a lasting finish create the allure of a seductive wine unlike any other, capable of withstanding the nearly impossible pairing of dark chocolate.
Contains sulfites.
Barolo Chinato Cappellano was born in the late 19th century when Giuseppe Cappellano, a pharmacist from Serralunga d'Alba with a shop in Turin, developed the original recipe for Barolo Chinato, proposing what would soon become one of the classics of Italian winemaking as a 'medicinal and antimalarial remedy.' We speak of and not of because this great aromatic meditation wine is the product of artisanal expertise, passed down in the family from generation to generation, which has much to do with knowledge of the land and rural culture.
