Stefano Amerghi Shiraz is produced in an area within Cortona known as Poggiobello di Farneta, on two hills with a south-southwest exposure, enclosed between an old gravel road to the west, a grove to the south, and the ridge of hills to the east, closing the horizon. Geological and climatic surveys conducted on the estate confirmed that this was the ideal terroir for planting the carefully selected Syrah clones and selections from the Rhone Valley. Vineyard management follows the principles of natural viticulture and biodynamic agriculture: pruning and soil cultivation are regulated by the lunar and planetary phases; plant protection relies solely on copper and sulfur, distributed in minimal quantities, thanks also to the use of macerates and natural herbal teas; biodynamic preparations help revitalize the soil and avoid any fertilization, while winter green manures help structure the soil during the cold season. All this is done to ensure healthy bunches ripen and to allow for winemaking with the complete absence of additives and chemicals. After destemming, the grapes are partly left whole and partly lightly crushed by foot and placed by hand in small concrete vats without the use of pumps. Fermentation occurs spontaneously without the use of selected yeasts, sulfur dioxide, or temperature control. Aged in wood and concrete for 14 months, the wine is bottled without filtration or stabilization.
