San Giorgio's 'Cieck' sparkling wine is a classic method sparkling wine produced exclusively with Erbaluce di Caluso. To initiate fermentation, the grapes are gently pressed. The second fermentation lasts 36 months and takes place in the bottle after the addition of selected yeasts. After the dead yeasts are removed, it undergoes a final 6-month refinement.
