La Rocca enjoys a unique microclimate that allows for wines with unique, inimitable bouquets and flavors. The overripe grapes, often harvested in late October, lend the wine remarkable complexity and aroma. The first label for this wine dates back to 1978. It is produced by destemming and pressing the grapes, followed by a brief maceration and selection of the free-run must. Fermentation takes place in 2500-liter barrels and 500-liter vats. Maturation in wood lasts approximately a year, during which the wine, in contact with the finest lees, develops a complex and rich bouquet. It is then aged in bottle before release.
