Pieropan's Soave Classico 'Calvarino' is produced in the vineyard of the same name, located in the heart of Soave. The name derives from 'small ordeal,' given the difficulty of cultivating this soil and the tortuous path leading to it. The wine is a blend of 70% Garganega and 30% Trebbiano di Soave. The Trebbiano di Soave grapes are harvested by hand in mid-September, and the Garganega grapes begin in October. The grapes are destemmed and pressed. The free-run must is selected and fermented at a controlled temperature in glass-lined concrete tanks. The wine ages in glass-lined concrete tanks on the finest, most noble lees for a year. Bottling and release are planned for the spring following the harvest, after a few months in the bottle.
