Sauvignon Peter Dipoli 'Voglar' 2021
Peter Dipoli's Sauvignon Blanc 'Voglar' undergoes alcoholic fermentation for approximately ten days in large acacia barrels. Malolactic fermentation is avoided, and the wine remains on the lees in the barrels until the May following harvest. In the first three months following fermentation, battonage is performed every ten days. The wine is then bottled and remains in the cellar until January of the following year, before being released to the market. Annual production is approximately 30,000 bottles, and the first vintage was 1990.

Peter Dipoli's Sauvignon Blanc 'Voglar' owes its name to the ancient name of the area where the winery's vineyards are located. The term derives from the Trentino dialect expression 'fogolar,' meaning hearth. The vineyards were originally planted with Schiava, a local grape, which was completely replaced by Sauvignon Blanc between 1988 and 1991. Careful study and research on this variety have led to the conclusion that Voglar's location, altitude, and calcareous soils are ideal for producing an excellent white wine. The relatively high hillside favors the grapes' complete physiological ripening without losing acidity and aromas. The winery's goal is to produce a wine with complex aromas of tropical fruit that express the original grape variety while avoiding the vegetal and immature notes typical of the variety.
