Elena Walch's ''Castel Ringberg'' Sauvignon is produced with grapes from the vineyard of the same name, harvested and pressed with static decantation of the must. Part of the wine ferments in steel tanks at a controlled temperature of 18°C and remains on the lees until spring. The remaining part (approximately 15%) ferments in barriques. Blending takes place shortly before bottling, with subsequent maturation in the bottle.
