Sauvignon Fume' Weingut 2022 is a prized white wine born from rock: the vines are rooted on the slopes of a southeast-facing moraine hill overlooking the Adige Valley, at an altitude of approximately 450 meters above sea level. The vineyard is managed with a fully sustainable approach, avoiding synthetic chemicals, while the grapes are harvested manually once the fruit is ripe. In the cellar, the grapes undergo cold maceration for approximately 24 hours, followed by direct pressing. Alcoholic fermentation takes place in 500-liter oak barrels with only indigenous yeasts. Twenty percent of the wine is left to macerate on the skins for four weeks; after blending, malolactic fermentation takes place. The process concludes with aging on the fine lees for 16 months.
