Sauternes 'Carmes De Rieussec Chateau' Rieussec is made from 87% Semillon, with the addition of 7% Sauvignon Blanc, and the remainder Muscadelle. Fermentation takes place in barrels. Each varietal from a clearly identified plot is isolated in a batch of barrels to assess its potential for becoming a great wine after fermentation. Several tastings of each barrel are then conducted to rigorously select the finest wines. Each vintage is aged in oak barrels, primarily from the Tonnellerie des Domaines, half of which are renewed annually. The length of barrel aging varies depending on the vintage, from 16 to 26 months, during which the wines are periodically racked. The wine is bottled at the Château.

Sauternes Les Carmes de Rieussec is located in the southern Bordeaux region. This château belonged to the Carmelite monks of Langon in the 18th century and was sold as a national asset after the Revolution. Of ancient excellence, it was classified as a Premier Grand Cru of Sauternes in the 1855 classification. To produce this Sauternes, after the harvest, the grapes arriving at the cellar are immediately pressed by parcel. The must from each parcel is then placed in separate barrels after skimming to carry out fermentation.
