Anghelu Ruju Tenute Sella & Mosca is a red passito wine produced from Cannonau grapes dried in the sun for 15-20 days on cane frames raised from the ground and covered every night and in case of inclement weather. After a long period of natural drying in the sun, the grapes are vinified according to the traditional 'red vinification' with the fermentation temperature increasing from an initial 18°C to a maximum of 28°C. Once two-thirds of the sugars have been consumed, fermentation is stopped with the aid of low temperatures, resulting in a wine with a residual sugar content of around 90 g/liter and an alcohol content of approximately 12-13% vol. The wine is aged in steel until the spring following the harvest, after which it is fortified to bring the actual alcohol content to approximately 19% vol. This is followed by a long aging in large oak barrels.
