Ruche' di Castiglione Monferrato Bava is considered by all locals to be the parish priest's wine. In fact, Don Cauda was the father of modern Ruchè, a native grape cultivated for centuries for small-scale production of sweet wines until he began cultivating a modern vineyard and popularizing it as a classic red wine. Genetic similarities with Primitivo, Zinfandel, and other wines have been attributed to it, with which it shares an unusual aromatic heritage, but Ruchè is simply original and unique. It is a fragrant, dry wine with sweet, light tannins, moderate acidity, and good alcoholic strength. It can only be produced in seven municipalities of Monferrato: too small in quantity to be a world-class wine, it is available to those seeking something authentic yet unusual for contemporary cuisine.
