Primitio L'Archetipo is produced from the grapes of the same name, cultivated synergistically. After mechanical crushing and destemming, the must ferments spontaneously thanks to the addition of indigenous yeasts, the only ones capable of best expressing the terroir of origin. After 20-30 days, at the end of fermentation, the pomace is separated by light pressing. Natural decantation without fining agents. Unfiltered. Aged in stainless steel for 18 months on fine lees, where malolactic fermentation takes place. It is then racked into large wooden barrels for 18 months, followed by aging and bottle aging for at least 6 months. Minimal sulfur dioxide is added before bottling. This is a Triple A-rated wine: farmers, artisans, artists.
