Fiano Archetipo is excellent with fish and shellfish-based first and second courses; try it with meat-based first courses, vegetables, and greens.

Fiano Archetipo is produced with 100% Fiano Minutolo using synergistic cultivation methods. The soil is predominantly clayey with veins of limestone mixed with siliceous gravel; it is rich in humus. The 'Free-standing' espalier training system is used, in honor of Rudolf Steiner's book 'Philosophy of Freedom'. The grapes are harvested by hand. After mechanical crushing and destemming, the must ferments spontaneously on the skins thanks to the addition of a pied de cuve containing indigenous yeasts, the only ones capable of best interpreting the terroir. After 6-7 days of maceration on the skins, the skins are removed and fermentation continues for approximately 2 months at low temperatures (13-14°C). Natural decantation without fining agents. Unfiltered. Aged in stainless steel for 5-6 months on its fine lees, shaken every 15 days. This is a Triple A rated wine: farmers, artisans, artists.
