Jermann's Pignacolusse is produced exclusively with Pignolo grapes, an ancient Friulian grape variety that has almost disappeared, but which, thanks in part to the Jermann winery, continues to grace our tables today. The name Pignacolusse combines the grape's bizarre shape (similar to a pine cone) with the vineyard's cadastral name, thus paying homage to the native fruit and its terroir. The winery is still committed to this variety, believing it to be an expression of strong personality and distinctive character. It's a wine with a bold flavor, very dry and rich in tannins, and can, at times, be rough and angular—a wine that, it is said, can reflect the character of its maker. It's best served at 16-18 degrees Celsius.
