Poja Allegrini ferments for approximately 12-15 days in stainless steel at a controlled temperature with periodic daily pumping over, while malolactic fermentation takes place naturally in barriques in November. The wine then ages in new Allier barriques for 20 months, then in large Slavonian barrels for 8 months, and then in bottle for 10 months.

Visual tasting
Clear, concentrated and impenetrable ruby red in color. Consistent.

Dry, warm, very smooth, quite fresh, quite tannic, and quite savory, a wine that leans more toward the softer components. Round and velvety in body.

Allegrini Poja is ideal with roasted red meats and game. Excellent with mild, mature cheeses, it pairs beautifully with dishes featuring white and black truffles.

La Poja Allegrini was founded in 1979 when Giovanni Allegrini, driven by a brilliant intuition and a profound knowledge of his beloved Valpolicella, decided to plant only Corvina Veronese grapes on the summit of ''La Grola.'' A remarkably successful wine, the hilltop features a tiny plateau of less than three hectares, dazzling with the whiteness of its limestone rocks, planted entirely with Corvina since the late 1970s. High-quality viticulture delivers grapes of great personality and perfect ripeness to the winery. After over four years of aging, the wine is extraordinarily fresh and crisp, with ample aromas of fruit, spices, and medicinal herbs, full-bodied, and a juicy, long finish.
