Edda Bianco San Marzano is produced primarily with Chardonnay grapes and other native white grape varieties grown in Salento at approximately 100 meters above sea level. The soil is shallow and medium-fine in texture. The grapes are harvested in the second ten days of August, then destemmed and left to undergo cold maceration for a few hours. The next step is soft pressing of the pomace, followed by cold static decantation to allow it to occur naturally. Alcoholic fermentation takes place in French oak barriques. It is then aged on the lees in French oak barriques for four months with weekly bâtonnage.
