The Antinori Cervaro della Sala in a magnum format is produced by Marchesi Antinori on the Castello della Sala estate in Umbria from Chardonnay and Grechetto grapes. Vinification occurs using the principle of gravity, thus minimizing energy consumption and maintaining the ideal wine temperature. The Chardonnay must, after maceration on the skins, is transferred to tanks for decantation and then to small oak barrels. After nearly five months in wood, the Chardonnay is blended with the Grechetto, which is fermented exclusively in stainless steel. A fine wine, also excellent for aging.
