The grapes are destemmed and then pressed using flexible pneumatic pressing. The must is fermented at a controlled temperature of 23°C. No malolactic fermentation takes place. It ages in stainless steel and concrete tanks. It is bottled between February and March. This is a Triple A classified wine: farmers, artisans, artists.
