Speri's Valpolicella Ripasso Classico Superiore is produced using the 'ripasso' technique. After manual harvesting, the grapes are immediately pressed and then macerated at a controlled temperature. In early March, the Valpolicella Classico is passed through the Amarone pomace once. It ages for 12 months in 20-hl Slavonian oak barrels and then in the bottle for another 6 months.

Speri's Valpolicella Ripasso Classico Superiore is produced using the 'ripasso' technique, deliberately applied more restrictively than the production regulations. It is obtained by repassing the Valpolicella Classico over the Amarone pomace only once. The result is an authentic local wine that elegantly displays a beautiful complexity of fruity aromas and spicy notes, well-supported by good acidity and a balanced alcohol content. The vineyards are owned by the Speri winery, located in the heart of the Valpolicella Classica area, between 120 and 350 meters above sea level, specifically in the municipalities of San Pietro in Cariano, Fumane, and Negrar. The grapes used are: 70% Corvina Veronese, 20% Rondinella, 10% Molinara and other native varieties. After manual harvesting, the grapes are immediately pressed and subsequently macerated at a controlled temperature. In early March, the Valpolicella Classico is repassed. Aged for 12 months in 20-hl Slavonian oak barrels. Aged in bottle for 6 months.
