Viviani's Valpolicella Classico is produced with Covina, Molinara, and Rondinella grapes. The vines range in age from 20 to 60 years, planted primarily with French gyot, with a bud count ranging from six to ten. From the vineyards where Amarone grapes are not selected, the grapes for Valpolicella are harvested manually. This wine undergoes simple vinification in stainless steel to preserve its authentic flavor.
