Corte Sant'Alda's Valpolicella Ripasso 'Campi Magri' is produced with a blend of Corvina Grossa, Corvina Veronese, and Rondinella. Like all the estate's grapes, they are certified organic, and for several years now, the estate has been managed according to the principles of biodynamic agriculture. In this Valpolicella, fermentation begins spontaneously in oak vats, where the wine is then 'ripassato' (ripassed) in February on the pomace, still swollen and rich in Amarone must. This traditional technique and the use of 14-hl cherry wood barrels, where the wine ages for approximately 24 months, give it a sweet and intense aroma of ripe fruit.
