The Valpolicella 'Ca' Fiui' Corte Sant'Alda is produced with a blend of Corvina Grossa, Corvina Veronese, Rondinella, and Molinara, which, like all the estate's grapes, are certified organic and grown according to the principles of biodynamic agriculture. Harvesting, as is traditional, is entirely done by hand, beginning in early October. Fermentation, which takes place in oak vats, begins spontaneously (with indigenous yeasts). Delestages, hand punching down, malolactic fermentation, and the wine's maturation in the fermentation vats for at least six months contribute to a fine level of complexity, where spice and intensity prevail over fruit.
