La Selvatica Spumante d'Asti is produced from grapes that are aromatic par excellence; it requires a special winemaking technique to preserve all the fruit's fragrance in the wine. Immediately after being harvested strictly by hand, the grapes are delicately pressed and the resulting must is refined and filtered to a brilliant color. This grape juice is stored in refrigerated tanks until it is processed in an autoclave to obtain a lively wine through temperature-controlled fermentation using selected yeasts.
