It becomes a great sparkling wine, especially with light dishes. It pairs very well with fish.

Prosecco Vettori Brut is a sparkling Prosecco from Valdobbiadene DOCG. It is made from a selection of only the company's own Prosecco grapes. The vineyards are trained using the Sylvoz and Doppio Capovolto methods, with a density of 3,000 vines per hectare. This allows for a low unit yield per vine and a higher quality of the grapes obtained and therefore of the resulting wine. The base wine is obtained from a careful white vinification process involving soft pressing, purification of the must by refrigeration, and temperature-controlled fermentation, around 19/20°C. The subsequent secondary fermentation takes place in an autoclave at a low temperature to avoid weakening the typical fragrance and aroma of this grape variety. Excellent as an aperitif. It becomes a great sparkling wine, especially with light dishes. Very good paired with fish.
