Antinori's Santa Cristina ''Le Maestrelle'' ferments and macerates specifically for each grape variety, enhancing their aromatic characteristics and the softness of their tannins. The fermentation temperature never exceeds 25°C, and pumping over is done gently and delicately. Malolactic fermentation is completed by the end of October, allowing the wine to begin its aging period in stainless steel tanks. Bottling begins in October.
