While studying oenology in Germany, Ignaz discovered his passion for Riesling, which he soon wanted to cultivate in his own vineyards. The Riesling vines are located on the cooler, eastern slopes, surrounded by shady beech trees. The Dolomite rock and the 600-meter altitude are the main components that give the wine its exquisite freshness. Although it matures outside of traditional wine-growing areas, it has great potential for development over the years.

Riesling Niedrist pairs beautifully with freshwater fish. Try it with pike roe or potato-crusted whitefish.

Riesling Niedrist is the fruit of the 'Untersteiner' vineyard, located at 600 meters above sea level in the Appiano Monte area. The Dolomite soils are very deep and enjoy an excellent and constant supply of water. Fermentation takes place in stainless steel for approximately three weeks at 19-20°C; malolactic fermentation is not performed. After aging in stainless steel, the wine stabilizes with the winter cold and then undergoes a light filtration before bottling.
