Nebbiolo Cavallotto 2022
Cavallotto Nebbiolo is produced from the homonymous grapes grown in the Bricco Boschis, Vignane, Codana, and Pernanno vineyards. Vinified on the skins, it ferments with natural yeasts and undergoes semi-submerged cap maceration for 18-30 days. It matures in Slavonian oak barrels for 15-24 months and then refines in the bottle for 6 months.

Vinification involves complete destemming and fermentation with indigenous yeasts in horizontal fermentation tanks. Traditional fermentation involves semi-submerged cap maceration at a controlled maximum temperature of 29°C, with maceration lasting 18–30 days. Malolactic fermentation takes place in concrete tanks during the spring following harvest, followed by aging for 15–18 months in 20, 30, 50, 80, and 100 hl Slavonian oak barrels.
