Montepulciano d’Abruzzo Harimann'' Pasetti is obtained from grapes grown in old vineyards, with an average yield of 70 quintals/hectare. The grapes are harvested by hand in the first ten days of November and pressed and fermented in stainless steel vats for 25-30 days. After racking and storage for approximately 12 months, the wine is aged in barriques for 24 months. The term arimanni derives from the Lombard root Harimann. The arimanni were groups of free men with full civil rights, i.e., not subject to slavery, who placed themselves at the service of the kings or dukes to meet the defense needs of the Lombard kingdom. They were assigned lands, near cities or in strategic locations, with the task of cultivating and defending them. The Arimannie also dedicated themselves to political, economic, and agrarian administration activities, playing a fundamental role in the stability of the Lombard kingdom.
