The Grappa di Vino Santo 10 Anni S.Massenza Giovanni Poli is produced from Nosiola grape pomace dried on the ''arele'' (racks) for the production of Vino Santo Trentino. The sugar-rich pomace ferments for 15 days, and after Holy Week, it is distilled using a discontinuous bain-marie still. This process has created a smooth, fine, and harmonious grappa, ideally suited to a long aging period of 10 years, which takes place in small wooden barrels previously used for Vino Santo. It is in the wooden barrels that the alchemy of wood, grappa, and oxygen slowly takes place, through the micropores of the staves still soaked in Vino Santo, thus evolving in a unique way, enhancing the soft and aromatic essence.
