Grappa Rebo Giovanni Poli is produced with the pomace of the same name from the Valle Dei Laghi. Artisanal distillation in a bain-marie according to the ''Tullio Zadra'' system, a very slow method that allows for the proper selection of volatile substances and the concentration of the finest aromas and flavors. For this grape variety, a second distillation is performed to enhance its finesse. It ages for 6 months in stainless steel vats.
