The Frascati Superiore 'Filonardi' Villa Simone is produced exclusively from grapes grown in the vineyard of the same name, located on a steep hill. The soil is particularly rich in microelements, particularly metals, evidently of volcanic origin. Malvasia del Lazio, Malvasia di Candia, Trebbiano, and Grechetto are grown here, all trained using the Guyot system. The planting density is 4,000 vines per hectare. The whole grapes are soft-pressed, and fermentation takes place at a controlled temperature. It ages on fine lees for three months. In the state archives in Rome, file 1286 from 1806, we read, 'The Filonardi family, Roman patricians, owned many properties and farmhouses in this area, but the farmhouse registered to them is located between Massarosa and Torricella. Here, Natale Filonardi produced the best thirty barrels of wine in the area.' To date, it is one of the few Frascati Crus recognized and certified by the regulatory bodies.
