The Poggio le Volpi Frascati Superiore ''People'' is produced with a blend of Malvasia di Candia and Trebbiano grapes grown on red volcanic soil rich in micronutrients. The grapes undergo a brief maceration on the skins, followed by soft pressing. The must is refrigerated and statically decanted for approximately 24 hours, followed by fermentation at low temperatures and a brief period on the lees.
