Roma Bianco Poggio le Volpi is produced on red volcanic soils rich in micronutrients and medium-textured clay soils. The hand-harvested grapes undergo low-frequency destemming and soft pressing, followed by draining of the must with pneumatic presses and static decantation. Fermentation takes place in 40-hectoliter steel tanks at a controlled temperature, followed by maturation in steel on the lees before bottling.
