Etna Bianco Santo Spirito ''Vigne Niche'' Tenuta Terre Nere is an organic wine produced with 100% Carricante grown in the Santo Spirito district, in the municipality of Castiglione di Sicilia (Catania). A hilly area characterized by strong temperature variations between day and night, composed of loose, dark volcanic soil, very rich in minerals. Vinification in white with short cold maceration (8-10° C), soft pressing, static decantation and alcoholic fermentation in 5 and 10 hl French oak barrels. Subsequently, malolactic fermentation takes place and maturation in barrels for 10 months, followed by bottle aging for a further 8 months.

Etna Bianco Santo Spirito ''Vigne Niche'' Tenuta Terre Nere is made exclusively from Carricante grapes. The producer decided to produce it in 2007, after having had the good fortune to taste a 42-year-old Carricante on three different occasions. This wine was so beautiful, so impeccable and vigorous despite its venerable age, that the winery decided to attempt producing something similar. The wine is fermented and aged in 10-hectoliter barrels. It is a wine whose rare complexity blossoms wonderfully over time. Of great longevity, it will reward your patience with a beauty of unusual nobility.
