Damiano Ciolli's Cesanese di Olevano Romano 'Silene' is the winery's entry-level wine. Fermentation lasts about eight days; after racking, the Silene ages in cement vats on its fine lees for about a year, and after bottling, it rests in our cellars for another six months.

Damiano Ciolli's Cesanese di Olevano Romano 'Silene' is the winery's entry-level wine. Its name comes from a very common flower in our countryside, Silene Vulgaris, recognizable by its characteristic balloon shape. It is made from a selection of Cesanese di Affile grapes (100%) from vineyards planted in 1981 and 2002, trained using the spurred cordon and Guyot systems respectively. The grapes, harvested by hand when optimally ripe, are fermented in steel tanks at a temperature no higher than 25°C to preserve the characteristic aromas of Cesanese. Fermentation lasts approximately eight days; after racking, the Silene ages in cement tanks on its fine lees for approximately a year, and after bottling, it rests in our cellars for an additional six months.
