Barbaresco 'Starderi' La Spinetta is produced exclusively from Nebbiolo grapes grown in the vineyard of the same name, on clay-limestone soil. The grapes are vinified in red with alcoholic fermentation for 7-8 days in temperature-controlled rotofermenters, followed by malolactic fermentation in barriques, after which the wine is aged in medium-toasted French oak barriques for 22 months. After aging, the wine is transferred to steel tanks where it remains for 3 months before bottling. It then ages for a further 12 months in bottle before being released for sale. No filtration or fining is performed.
