Ansonica dell'Elba ''Ansora'' Mola is produced primarily with Ansonica grapes and small percentages of Procanico and Malvasia. The grapes come from vineyards belonging to different plantings, both flat and hilly. They are loosely trained using the spurred cordon system, with a density of 4,800 vines per hectare and an average age of 15-20 years. Harvesting is carried out entirely by hand around mid-September. Fermentation of all the musts takes place in temperature-controlled stainless steel containers. Maturation also takes place in 25 hl stainless steel containers until February, when the two lots are blended. It is bottled between March and May.
