Alsace Hugel Gentil is the result of a complex cuvée in which the grapes are harvested by hand and transported to the press in small vats, which are filled by gravity. After pressing, decanting continues for several hours, then fermentation takes place in temperature-controlled barriques. The wine is racked only once, before natural clarification during the winter. The following spring, the wine is lightly filtered just before bottling.
