Cavalleri Pas Dosé sparkling wine is produced with 100% Chardonnay grapes from a single harvest, sourced from vines at least 30 years old and grown on southeastern-facing soils. The resulting wine is fermented and aged in steel. After secondary fermentation, the cuvée ages on the lees for 42 months. Riddling is carried out strictly by hand for approximately four weeks. The result is a vertical, profound Franciacorta that will surely amaze with its longevity and aging potential.
