Antonelli's Sagrantino Montefalco is produced from the eponymous grape, grown exclusively in Montefalco for centuries. Vinification is carried out by gravity-fed tanks, followed by fermentation on the skins for 25-40 days at a temperature of 25-28°C. Clarifying occurs spontaneously without filtration. Maturation takes place in predominantly large oak barrels for at least 18 months. It then rests in concrete vats before bottling. Montefalco Sagrantino generally reaches full maturity 10-15 years after harvest and can age in the bottle for over 30 years.
