Pinot Noir Montauto is vinified as a red wine with soft pressing of the whole bunch. Cold maceration lasts 48 hours and fermentation on the pomace lasts 7 days in steel barrels. One-third of the wine is then aged in new barriques and two-thirds in old French oak barriques for 14 months.

What to pair wine with Pinot Nero Montauto 2023

Pinot Noir Montauto pairs well with poultry, white meat, pasta with ragù, and semi-mature cheeses.

Pinot Noir Montauto is produced with grapes from 15-year-old organically managed vines. The soils are located 200 m above sea level and 10 km from the coast, south of the Grosseto province, in the Maremma hinterland. They are predominantly clayey and rich in gravel, characterized by significant temperature variations between day and night. Harvested when fully ripe, the grapes are selected and picked by hand. The harvest takes place in the last ten days of August, exclusively in the early hours of the morning, to ensure a very cool temperature when the grapes arrive in the cellar. Vinification involves soft pressing of the whole bunch. Cold maceration for 48 hours and subsequent fermentation on the pomace for 7 days in steel barrels. One-third of the wine is then aged in new barriques and two-thirds in old French oak barriques for a period of 14 months.
