Pastis 51 is an aniseed-flavored spirit produced in Marseille. Created in 1951 by Pernod when the ban on aniseed-based aperitifs was lifted, this classic quickly became a leading brand in France. This version of pastis (from pastisser, or 'to mix,' in Provençal French) contains Chinese star anise, Provençal aromatics, fennel, oriental licorice, and African kola nut to offer a light and refreshing Mediterranean flavor.
