Passobianco Passopisciaro is made with 100% Chardonnay. Upon his arrival on Etna, Andrea Franchetti planted 4 hectares of Chardonnay, all between 850 and 1000 meters above sea level on the steep terraces of the Contrada Guardiola, where the deep, loose soil is composed of volcanic ash with a high mineral content. The harvest is meticulously conducted, vine by vine, day after day, tasting the grapes to ensure full and uniform ripeness of all the bunches, picking only small portions of the vineyard each day and extending the harvest over two weeks. The result is a rich yet fresh wine, luminous yet multifaceted. Its complexity is due to the combination of the specific light conditions, temperature ranges, high altitude, and volcanic soil found only on Etna. Chardonnay adapts well to these conditions and evolves over time to give life to a wine with great aging potential, on par with the great white wines of Burgundy.
