Visual tasting
Crystalline, pale pink in color with orange hues. Fairly consistent.

What to pair wine with Onde Rosato De Sanctis 2024
Onde De Sanctis is excellent as an aperitif paired with medium-aged cheeses, stretched curd cheeses, and cured meats. It pairs perfectly with first courses based on fatty fish and/or vegetables, such as risotto with raspberries and red shrimp or pasta alla norma. It pairs well with grilled or roasted white meats, especially rabbit and turkey.

Onde De Sanctis is a rosé wine with a strong personality, produced from a pure international grape variety: Cabernet Franc, grown on volcanic and mineral soils characterized by tuff. The subsoil is rich in potassium and provides constant hydration to the vine. The ancient presence of a lake also makes the land easily cultivable. Thanks to its strategic location within an ancient crater, the climate is Mediterranean, characterized by mild winters (thanks to the influence of the nearby Tyrrhenian Sea) and hot, breezy summers. After a careful selection of the Cabernet Franc grapes, it is fermented for approximately 15-20 days at a controlled temperature in stainless steel tanks, without the addition of sulfites. It is then aged for 5 months in stainless steel on its fine lees. It is then further refined for 2 months in bottle.
