Marco Carpineti's Apolide is a wine made with Nero Buono di Cori grapes. The Carpineti family farms organically in this land south of Rome, focusing exclusively on native varieties that bring out the best in these wines. The vinification of Apolide begins with approximately two weeks of maceration at a controlled temperature. The must then ages in barriques for 24 months. This wine has a dry flavor and a pleasant bitterish finish.
