Fiano Cantina Del Barone 'Particella 928' 2020
Cantina del Barone's Fiano 'Particella 928' ferments in stainless steel without added yeast for approximately two weeks. The wine then continues to mature in stainless steel on fine lees for approximately eight to twelve months (depending on the vintage), followed by at least four months of bottle aging. Sulfites are added only during bottling as an antiseptic. The soils from which Fiano is produced are of volcanic origin, loose with a strong presence of minerals and bedrock present deep at the surface, which gives the vines their characteristic smoky aroma.

Cantina del Barone's Fiano 'Particella 928' is a precise idea, a project born from Luigi Sarno's experience, marking the transition from family tradition to the creation of a new product, focused on the desire to create a fully natural wine. In 2001, part of the Fiano vineyard, 'Particella 928', was replanted with a new planting pattern and a different row orientation. This allows the 2,800 vines to receive even sunlight across their entire canopy, allowing the grapes to ripen more fully. In 2009, the grapes were vinified separately for the first time. Fermentation took place without the addition of selected yeasts and the wine remained on the lees for approximately seven months. Finally, four months of bottle aging gave birth to Fiano di Avellino 'Particella 928'.
