Cirò Biano San Francesco is produced exclusively with Greco Bianco grapes. It is grown in central-eastern Calabria, in the province of Crotone, in the Cirò, Cirò Marina, Crucoli, and Melissa grape varieties. Vinification is done by destemming, soft pressing, and yielding 60% free-run must, followed by temperature-controlled fermentation. It matures in stainless steel and ages for one month in the bottle at a controlled temperature.
