How to taste it

Visual tasting
Clear, ruby red in color with light garnet reflections. Consistent.
Olfactory tasting
An intense nose with oak notes and accents of morello cherry, violet, and pomegranate. There are also hints of earth, nuances of sage, and soy.
Taste tasting
The tannins are deeply interwoven into the body, firm yet refined, and give this wine exceptional structure, a framework from which the fruit, oak, and aromas can fully express themselves. The wine unfolds slowly in the glass, becoming more sinuous and sensual as it comes into contact with air, and the slight astringency of the tannins invites further sips.

Castello Romitorio Brunello di Montalcino is produced from carefully harvested and hand-selected Sangiovese grapes. The Romitorio winery is located in the northwest quadrant of Montalcino. Fermentation takes place in stainless steel tanks, with a brief initial period of cold maceration (below 20°C) on the skins for approximately 15-20 hours, followed by a higher-temperature maceration that can last up to 20 days. Separation of the skins and free-run wine begins around the 20th day, once fermentation is complete. Once the free-run wine is obtained, natural malolactic fermentation takes place. The wine ages in oak for approximately 24 months and, after bottling, is aged in Castello Romitorio's temperature-controlled cellars for approximately another 12 months before being released for sale.
