Amarone Romano Dal Forno is produced with 60% Corvina, 20% Rondinella, 10% Oseleta, and 10% Croatina. The grapes used for Amarone come exclusively from vineyards that are at least 10 years old. After decanting in mid-January, the Amarone, which still retains some residual sugar, is transferred to new barriques, where it resumes a very slow fermentation process that continues for another eighteen months. The total aging period in barriques lasts 36 months. Bottling takes place after the various barriques have been assembled and the resulting blend has been filtered. A further 24 months of bottle aging precedes the release of the finished product.
